Thanks so much for joining my live on TikTok today while I made these brownies. They came out great, and my son will be by soon to pick them up. As promised, I will post the recipe I used here, as well as the original I found.
What you need:
1 brownie mix – I use Betty Crocker Supreme Brownie Mix
1 8 oz package of cream cheese
1/4 cup sugar
1/4 tsp vanilla
1 tube of gel food coloring
First of all, before you do ANYTHING else, take out the cream cheese to soften up. Give it at least 20 -30 minutes.
Preheat the oven to 325 degrees.
Use the pan you normally use to make brownies. I line mine with parchment paper. If you don’t have any, make sure you spray the bottom AND the sides really well.
Follow the directions on the box to make the brownies. Put to the side for now.
In a separate bowl, put the softened cream cheese, the sugar and the vanilla. Mix well. Add the egg and mix until creamy. Select which color you are going to use and squeeze all of it onto the cheesecake mix. Blend well. (I use my hand mixer to do the cheesecake mix, just FYI)
Put 2/3 of the brownie mix in the pan and spread evenly. Using a spoon, put the cheesecake mix in all four corners and one spoonful in the middle. Then put the rest of the brownie mix on top of that. Take a regular knife (not a sharp one, just a regular silverware knife) and swirl the cheesecake and brownie mix together. Make sure you get it in all four corners. You can make whatever pattern you’d like.
Bake in the oven for 30-35 minutes, depending on your oven (mine is cantankerous). Put a hot pad on the counter and place the pan on top. Cool completely, then cut. The brownies need to be kept in the fridge, and will last 3 -4 days (although if you have kids around, they definitely won’t last that long).
These can also be done at Christmas. Just use Christmas colors instead of Halloween colors and call them Christmas Cheesecake Brownies!
